Hitsugaya's star sign is Sagittarius. I myself have been quite acquainted with astrology for some time. I'll do my best to analyze Hitsugaya with the help of my friend, , who has helped me with astrology on other shrines. Different books and different sites on astrology give different information and tend to change at times, so outside resources are almost never accurate. Don't take our word for it because we're only novices, and our outlooks on Sagittarius varies on certain topics. Below is the rather statistical information of Sagittarius.

I'm a bit more familiar with Fire signs more than any other sign since I'm also fire sign myself (Fire signs include Aires, Leo, and Sagittarius, in that particular order). There a lots of qualities that match Hitsugaya, and lots that don't. For example, one of the most known qualities is that Sagittarians like to travel. Seeing as Hitsugaya's occupation concerns slaying Hollows and traveling to all sorts of areas outside Seiteirei, this is true to some extent. However, Sagittarians aren't practical, which isn't true about Hitsugaya. Sagittarians are known to be wise, which definitely applies to Hitsugaya. He has the intelligence of a grown man; he's able to understand concepts and ideas that one would find ironic considering his appearance.
Which leads me to another idea on it's own. The Sagittarius is known as The Archer. Very often is Sagittarius depicted as a part man, part horse; the Centaur. Astrology itself has very close ties to Greek mythology, so a Sagittarius symbolized as Centaur seems appropriate. In mythology, Centaurs are known to be extremely wise; their half man, half horse body enables them to know both animal instincts and human instincts. The one weakness that a Centaur is unable to avoid is love. In a Hellenistic (late Greek era) sculpture, it shows a Centaur being struck by the god, Cupid. It was in a fury, loosing all self control and logic. This of course, has an ironic parallel to Hitsugaya. He was unmercifully defeated by Captain Aizen in his revenge for what he did to Hinamori. Whether it be love of Hinamori or desire to protect her that sent him rage or not, it shows that Hitsugaya has a weakness somewhere, no matter how powerful or wise he may seem. He can just as easily lose his temper all self-control just like that Centaur lost all sense of self when he was struck by an arrow of Cupid.
